I was wondering if you have any experience in mounting access point on a Vesa Interface like the monitor arm?

No idea exactly, depends on the access point? Some are made to be wall-mountable and have screw ears+detachable base. The only caution I'd exercise is to keep in mind metal plates reflect radio signals, so you can't expect good reception behind a metal vesa plate.
Linux is user friendly, it's just picky about its friends...
Disclaimer: Please use caution when opening messages, my grasp on reality may have shaken loose during transmission (going on rusty memory circuits). I also eat whatever crayons are put in front of me.
