Hello..How do programs such as Black Ice and zone alarm affect online gaming? Does one shut these programs down when it is time to game?

Well for most games to work properly, especially if your hosting a game for others to join you usually have to use NAT but only if you have more then one computer on the LAN and not enough ip's from your service provider to go around. You also have to map the range of UDP ports that the game uses to accept/send out packets via those ports. I've never used the software you describe, I use winproxy or Winroute pro to route most of my lan traffic through one of the pc's on my network while my main machine has it's own ip. But usually using firewall software requires mapping open ports to use so you can play all your games normally.
