I am involved in mass rollout and re-imaging of PC's as and when required.
Once the PC is added into the domain (all an automated process), I would
like to use GPO to rollout wireless setting including WEP password, is this
possible or is there an alternative I can use, such as a registry hack.

Thanks in advance for any help

Sure, you can use netsh plus group policy to push the wlan settings. This
how to may help.

How to export WLAN profile and import it using Group Policy
