What operating system are you running on the server?

What type of media are you trying to backup to? Tape drive? DVD?

Well....you have many options as to which software to use. First....what is running on the server that you need to backup? Any database engines? Mail server?

You have the bare backup utility built into Windows...it's OK for backing up bare files...somewhat decent at getting some open files. But minimal in logging.

You often have some backup software that's included in 3rd party tapedrives..such as Yosemite. Yuck

Moving onto other 3rd party brands..the old standby which was Veritas Backup Exec...which Symantec recently bought. Very popular still. Many special versions. Computer Associates Brightstore is another popular one..used to be called ArcServe.

Other newer ones...Dantz Retrospect is appearing to be well liked.

Well...what is it your further looking for? Gave you a handful of options for backup software...the next step is up to you..visit their website, check out their features..check out their prices...see if any match for you and your budget.

As for proceedure and settings....you have not chosen a product yet..so that is impossible to answer. The answer depends on what product you choose..based on reading their user manual. :rtfm:
